Surprisingly, Coconut Flower Nectar doesn't taste like coconut. It has a neutral sweet flavour (making it a closer match to sugar), and our Coconut Syrup has a light savoury flavour more like molasses with slight coconut notes.

Honest to Goodness Organic Coconut Flower Nectar is made using a process called Enzymatic Hydrolisis, which uses a lower temperature and enzymes rather than heating to achieve the final product. This results in a sweeter flavour and lighter colour. Coconut Syrup is made from sap that is heated to 75-80 degrees, which prevents fermentation and evaporates the water content, making it around 75% sugar and a dark mahogany brown colour.
