HOW TO USE
As rice flour contains no gluten, it absorbs liquid differently than wheat flour. Therefore, it's not recommended to substitute 1:1 in recipes.
However, this can be overcome by using gluten-free starchy flours or flours high in protein which improves the texture, binding, and moisture retention properties of the final baked goods!
When incorporating into wheat flour recipes, start with substituting one-quarter of the flour in a recipe.
For example, if a recipe calls for 1 cup of flour, use ¼ cup of brown rice flour and ¾ of all-purpose flour. This can achieve a lighter crumb in cakes, shortcrust in tarts, or crispy edges in cookies.

It is also an excellent thickener for sauces, soups and gravies! For every cup of liquid that needs to be thickened, use around 2 tbsp of rice flour.
