Pick N' Mix Breakfast Cookies
These cookies are packed with filling, nutritious goodness which makes them a great on-the-go breakfast option.
They’ve got the name ‘Pick n’ Mix’ because what you add into them depends on what you’ve got in the pantry! Below are some combinations to try:
Dried Apricot (sulphur free) & Almond
Dried Cranberries & Pistachios
Sultanas & Roasted Cashews
Pitted Dates & Pecans
Macadamia & Dark Chocolate
- Preheat oven to 160 degrees.
- Place all ingredients into the bowl of a stand mixer.
- Mix on low speed until combined and then increase speed to medium and mix until the mixture become quites ‘sticky’ (around 3-5 minutes).
- Roll mixture into balls (about the size of a golf ball), flatten slightly and place onto a lined baking tray.
- Bake for 15 minutes or until golden. Cool on a wire rack and store in a glass container for up to a week.
