Rocky Road Bliss Balls - Makes 12-15 medium size bliss balls.
Made with all Natural/ Organic Ingredients and are Vegan friendly.
Ingredients :
1/2 cup of Homemade Granola or Honest to Goodness Maple and Almond toasted muesli. 1/4 cup of Goji Berries 1/2 cup of Desiccated Coconut 3 TBS of Cacao Powder 10 Medjool Dates 1 TBS Of Maple Syrup 1 teaspoon of Vanilla Extract Pinch of Pink Himalayan Salt 1 cup of shredded Coconut ( for rolling balls )
Method
1. Chop Medjool Dates into small pieces and add to a high processed blender. 2. Add all other ingredients into your blender and blitz on high for 90 seconds - 2 minutes so it still has some texture. ( You may have to scrape down the sides of your blender half way through ) 3. Spoon mixture into a bowl and then in a seperate bowl put your shredded coconut. 4. Roll mixture into desired size balls and then roll into shredded coconut. ( when rolling the balls I like to slightly flatten mine with my palms so they are more even and easier to bite into ) 5. Once you have rolled your bliss balls place them in an air tight container and store them in the fridge for up to 2 weeks. If you would like them to last longer they freeze perfectly.
Tip : When making bliss balls have a small bowl of luke warm water next to you to wet your finger tips in between rolling your bliss balls so your fingers aren’t sticky from the mixture.
