How to Activate Nuts [Quick Guide]

Have you heard of activated nuts? If you're wondering what on earth activated nuts are, don't worry, it’s quite simple! Activation is what occurs when raw nuts have been soaked in a salt solution for a period of time - it stimulates the early germination and sprouting process within the nut, seed, legume or grain.

WHY ACTIVATE NUTS?

Raw nuts contain enzyme inhibitors that can sometimes cause an upset stomach, the nuts are activated to help break down these inhibitors, which releases the enzymes and makes nuts easier to digest and gentler on the stomach.

Activating nuts is not a necessary step, however, may help to improve your digestion especially when consuming a large amount.

HOW TO ACTIVATE NUTS

  1. Dissolve salt in enough water to cover the number of nuts/seeds you are activating.
  2. In a large bowl place your nut or seed of choice.
  3. Cover with the salt water solution.
  4. Soak for the required number of hours.
  5. Strain and rinse the nuts. After soaking, the nuts will look nice and puffy, and may even start to show signs of sprouting. Rinse the nuts under running water and pat dry.
  6. Spread over a dehydrator rack, or baking tray.
  7. Dry in the dehydrator for around 12-24 hours. If drying in the oven, set the oven at the lowest temperature possible, preferably no more than 65C. Stir or turn them occasionally, for the required drying time. You'll know they are ready when they're dry and crunchy (taste testing required!).

TIPS:

  • Cooking your nuts will destroy the activated enzymes and mineral, which is why you must dehydrate the nuts over a longer period of time.
  • Be sure you dry the activated nuts completely before storing as the moisture makes them more susceptible to mould.
  • Add some flavour by sprinkling your favourite herbs and spices over your nuts before popping them in the oven to dry.
