In a large saucepan over high heat, caramelise the onion and garlic with a dash of olive oil, stirring occasionally.
Add the mincemeat, tomato puree, chives and spices. Stir continuously until the meat is browned
Reduce the heat to low and add the drained beans and corn
Leave to simmer, stirring occasionally, for 10-15 mins to allow the juices and spices to absorb into the meat mixture
Serve with fresh guacamole and cheese, Enjoy!
