These little snack-sized morsel of joy are the perfect combination of coconut and chocolate. They are super easy to make and only contain a handful of ingredients. Oh, and not to mention they are vegan, dairy-free and refined sugar-free!
Tip: The mixture will be very sticky. When rolling the macaroons, make sure to press the mixture together first so it stays together, then you can start rolling.
DESCRIPTION
Pre-heat the oven to 180C.
In a bowl, combine the coconut condensed milk, desiccated coconut, vanilla extract and a good pinch of salt. Make sure to mix well – the mixture will be quite sticky.
Add the chocolate chips and mix again, making sure it is well combined.
Using a tablespoon, scoop a tablespoon size of the mixture. Using clean hands, press the mixture together then roll in your hands to form your desired shape.
Place the macaroons on a lined baking tray and bake for 12-15 min, or until lightly golden.
In the meantime, prepare your chocolate drizzle. Melt together the dark chocolate and coconut oil and set aside.
Once the macaroons are cooked, let cool slightly. Then, dip the bottom of each macaroon in your chocolate drizzle. You can use any remaining melted chocolate to drizzle on top.
