Crafted for those who value both flavour and provenance, these responsibly fished anchovy fillets are sourced from the warm Southern Mediterranean waters south of Sicily and Calabria. Caught by local boats and processed by hand in a small coastal facility, every jar reflects traditional methods and deep respect for origin. The anchovies are salted for six months in hand-harvested Trapani sea salt, allowing them to mature slowly in large vats to develop their rich depth and umami character. Once fully matured, they are carefully packed individually into glass jars with locally produced, cold-pressed extra virgin organic olive oil - green, fruity and perfectly balanced. The result is tender, savoury fillets with a clean, complex finish. The high-quality organic olive oil enhances the anchovies’ natural intensity without overpowering their refined Mediterranean flavour. HOW TO USE

GROWING & PROCESSING
Fished in the Southern Mediterranean by small local boats, these anchovies are landed fresh and processed close to shore. The fillets are cleaned and cured traditionally in hand-harvested Trapani sea salt, where they mature slowly over six months in large vats. After maturation, each fillet is carefully packed by hand into glass jars and covered with locally sourced, cold-pressed extra virgin organic olive oil. This slow, artisanal process preserves texture, flavour and integrity while ensuring full traceability from sea to jar. From warm Mediterranean waters to carefully sealed jars, every step reflects small-scale craftsmanship, environmental respect and time-honoured tradition.
