An easy, delicious and fruity recipe for overnight oats that is packed full of goodness including chia seeds, psyllium husks and pepitas. As submitted by Daniel Bell for a previous recipe competition.
Place oats, chia and psyllium in a glass jar (preferably one with a screw top cover, like a mason jar). Add soy milk and stir contents to mix.
Add medjool dates, strawberries and banana (or your choice of fresh and dried fruit).
Sprinkle the top with pepitas.
Tighten jar with lid and place overnight in the fridge.
Top with additional fresh fruit and serve.
