Your favourite chocolate bar becomes a delicious and healthy snack! This no bake, raw cherry ripe slice is easy to make - even the kids can give it a go! Great for special occasions, desserts or to have on hand as a sweet treat when you are looking for a sweet fix!!
Blend walnuts, dark choc power bites and dates until crushed and combined in a food processor or blender. Add a splash of water while blending.
Place baking paper into a square pan that’s 10cm deep, then put the blended mixture into the pan, patting it down until you have a 1cm layer consistent across the whole pan. Place in the freezer for 15 minutes.
Mix drained cherries, ½ cup of cherry juice from the jar, desiccated coconut, and coconut milk together in a mixing bowl. If you like here, you can add coconut flakes to give variety in texture as well (about 0.25 cup).
Take the pan with the chocolate and walnut base out of the freezer. Put the cherry mixture over the base until ½ the pan is full. Pat down to achieve an even consistency across the pan. Place in the freezer to solidify for 15 minutes while you prep the chocolate
Place a small pot over the stove top filled with water and bring to boil. Place a heat proof glass bowl on top to create a bain marie and put the chocolate into the bowl and whisk until it’s melted and creamy. Take the chocolate off the heat when its smooth and runny.
Take the pan out of the freezer and pour your chocolate mixture on top. Tap the pan down lightly to even the chocolate spread across the pan and then place it in the fridge for a few hours until the chocolate solidifies. I recommend leaving the cherry ripe in the fridge overnight (or minimum 6-8 hours) so the flavours combine and the chocolate hardens.
After a minimum of 8 hours, take it out of the fridge and pull the cherry slice out of the pan using the baking paper you laid it into. Wet a sharp knife and then slowly slice into the cherry slice into your desired pieces.
