You might previously have known this exceptional range under the Berkelo name. While they’ve stepped into a fresh look and a new name, their commitment to crafting 100% Australian-made, certified sustainable, and non-GMO food hasn't shifted an inch. Production has moved in-house to a dedicated artisan pasta facility in Brookvale, New South Wales, utilising the exact same traditional equipment previously operated by Wholegrain Milling.

The Secret is in the Sourdough and Soil

What sets General Wholefoods apart in a crowded marketplace is that they are Australia’s only long-fermentation pasta maker.

  • ASP Certified Sustainable Grains: Their flour is traditionally stoneground to retain essential minerals and nutrients. Their ASP-certified sustainable farmers manage land to sequester carbon, build biodiversity, and enrich the soil without any nasties or GMOs.
  • The Magic of Long Fermentation: Blended with a wild-fermented sourdough starter and filtered water, the dough undergoes a slow, traditional fermentation process. According to Dr. Dai Suter, this long fermentation breaks down gluten proteins and significantly reduces FODMAPs by up to 90%, making it far easier on the gut for those sensitive to modern wheat.
  • Nutrient Bioavailability: Fermentation releases essential minerals trapped by phytic acid such as zinc, iron, magnesium, calcium, and phosphorus making them far more bioavailable to your body. Plus, it results in a lower glycemic index (GI) and cuts cooking time down to about two-thirds of unfermented alternatives.

  • Kids Kangaroos (500g & 5kg): A fun, kangaroo-shaped pasta crafted from durum wheat flour, stoneground wholewheat flour, wild fermented sourdough starter, and filtered water. It carries a sweet, nutty wholegrain depth and goes brilliantly with any sauce for kids of all ages.
  • Spirals (400g, 1.5kg & 5kg): Versatile bronze-extruded spirals made with durum and stoneground wholewheat flour. They pair wonderfully with roast pumpkin, olive oil, garlic, chilli, and parsley.

  • Spelt Shells (400g & 5kg): Made using a blend of certified sustainable stoneground spelt flour, durum wheat flour, and wild sourdough starter. These hearty, nutty shells are designed to hold onto full-bodied sauces, from a slow-cooked ragù to burnt butter emulsions.
  • Khorasan Macaroni (400g, 1.5kg & 5kg): Crafted from ancient Khorasan wheat (a nutrient-dense relative of durum wheat originating from the Middle East) blended with durum flour and wild sourdough starter. It delivers a creamy, subtle, and nutty flavour profile that pairs impeccably with cheese-based sauces, classic carbonara, or seafood.
