Incaberry & Dark Chocolate Muesli Bars

These soft & chewy homemade muesli bars are packed full of healthy bits and taste super delicious!
- Preheat oven to 180 C. Grease and line a medium sized baking tray.
- In a large bowl, combine the rolled oats, seeds, incaberries, coconut, pecans, chocolate drops and salt.
- In a separate bowl, whisk together the eggs, olive oil, maple syrup and vanilla until well combined.
- Gently pour the wet mixture into the dry, stirring until combined.
- Evenly press the mixture into the prepared pan.
- Bake for 20 minutes or until golden brown. Once cool, cut into slices and enjoy!

¾ cup organic seeds of choice (i.e linseeds, sunflower, sesame seeds)
½ cup organic dried incaberries
½ cup organic shredded coconut
2 eggs, lightly beaten
½ cup organic extra virgin olive oil
½ organic maple syrup
¼ cup pecans, roughly chopped
¼ cup organic dark chocolate drops
Pinch of salt
1 tsp vanilla extract
