Don't let the name decieve you, these spiced apple muffins are full of flavour and will satisfy even the sweetest tooth. Perfect for a snack or enjoy with a fresh cup of tea.
DESCRIPTION
Preheat the oven to 180 C (160 fan forced). Lightly spray 12-15 muffin cups with cooking spray.
Strusel:
Combine sugar, flour and cinnamon in a small bowl.
Add the chopped butter and rub into the flour mixture using your finger tips until mixture resembles coarse crumbs. Stir in walnuts.
Muffins:
Combine both flours, baking powder, baking soda, cinnamon and nutmeg in a large bowl.
In a separate bowl whisk egg and sugar in a medium bowl until smooth. Whisk in applesauce, maple syrup, cider, yoghurt and oil.
Make a well in the dry ingredients bowl, and then add wet ingredients in. Stir the two mixtures together until just combined.
Scoop the batter into prepared muffin cups and then sprinkle the streusel over the tops.
Bake the muffins for around 15-25 minutes, or until the tops are golden brown and muffin spring back when lightly touched. Allow to cool in pan for 5 minutes.
