In need of a quick chocolate fix? This indulgent, moist cake complete with a gooey centre is made in minutes, vegan friendly & guten free. Talk about yum!

2 tbsp organic buckwheat flour
1 tbsp chocolate flavoured protein powder or more flour
1 tbsp organic granulated sugar (raw, coconut or rapadura)
1 tbsp organic cacao powder
1/4 tsp aluminium free baking powder 
1 tbsp organic coconut oil 
3 tbsp cold brewed Coffee (or milk + 1 tsp instant coffee)
1 tbsp Hazelnut spread or organic dark chocolate chips

 

  1. In a large mug, combine all ingredients except the spread or chocolate drops until smooth and lump free.
  2. Dollop the spread or drops into the centre of of the mixture.
  3. Microwave for 1 minute (1000 watt) or until toothpick comes out clean.
  4. Serve with fresh berries, ice cream or whipped cream.
