Gluten Free Flours
Gluten free flours are naturally made without wheat, rye or barley, making them suitable for people with coeliac disease and those who avoid gluten for personal dietary reasons.
Unlike traditional wheat flour, gluten free baking often combines different flours to achieve the ideal texture, flavour and structure. Almond meal adds richness, rice flour provides a light texture, buckwheat offers a hearty flavour, while tapioca and potato starch help create softness and elasticity.
Beyond baking, choosing a variety of gluten free flours can also encourage greater agricultural diversity. Instead of relying on a single cereal crop, alternative grains and seeds help broaden the food system and support farming practices that value biodiversity and resilient crop rotations.
- Suitable for coeliac and gluten-free diets
- Made from naturally gluten-free grains, seeds and nuts
- Unique flavours and textures for creative baking
- Supports greater crop diversity through alternative grains
- Perfect for breads, cakes, biscuits, pancakes and pastries
- Responsibly sourced from trusted suppliers

FAQs
What is the difference between organic and sustainable flour?
Organic flour is produced from grains grown without synthetic pesticides, herbicides or GMOs and is certified to strict organic standards. Sustainable flour is grown using regenerative farming practices that support soil health and biodiversity. Both are high-quality, traceable options. The main difference is the farming certification and approach.
Which flour is best for bread?
For breads, sourdough and pizza dough, choose a baker's flour or bread flour with a higher protein content. The extra protein develops stronger gluten, creating better structure and chew.
Which flour is best for cakes and biscuits?
For light, tender cakes and biscuits, choose a soft, finely milled flour such as plain flour or self-raising flour, depending on your recipe. Plain flour gives you more control over the rise, while self-raising flour is a convenient option for quick and easy bakes.
Are your flours unbleached?
Yes. All of our flours are naturally unbleached and free from chemical bleaching agents, preserving the natural colour and flavour of the grain.
Do organic flours contain additives or preservatives?
No. Our organic flours contain no artificial additives, preservatives or GMOs. They're simply milled from high-quality grains.
Why are some flours fortified with folic acid and thiamine?
Australian regulations require many non-organic wheat flours for bread making to be fortified with folic acid and thiamine. Certified organic wheat flours are exempt from this requirement, which is why some of our sustainable flours are fortified while our organic wheat flours are not.
How should I store flour?
Store flour in an airtight container in a cool, dry place. For longer storage, keep it in the refrigerator or freezer to maintain freshness, particularly for wholegrain and organic flours.
Can I substitute one flour for another?
Sometimes. Plain flour can often replace baker's flour for everyday baking, while gluten-free, coconut and almond flours usually require recipe adjustments due to their different moisture absorption and texture.
How do I know which flour to choose?
Each flour has unique baking qualities. Visit our Flour Guide above to compare protein levels, texture, best uses and baking tips, helping you choose the perfect flour for every recipe.
Do you offer gluten-free flours?
Yes! We stock a wide range of naturally gluten-free flours, including almond, buckwheat, coconut, cassava, tapioca, quinoa, teff, rice and more, making it easy to find the right flour for gluten-free baking.
