When you’ve got plenty of lemons, make doughnuts! This is a simple base recipe with a seasonal twist lemon juice and poppy seeds for a fresh, muffin-like flavour. You’ll need a doughnut baking tray. Makes 12.
DESCRIPTION
Mix flax egg, milk, apple cider vinegar and vanilla altogether (all the wet ingredients) and allow to rest for a couple of minutes for the flax egg and the apple cider vinegar to activate.
Then add all your dry ingredients.
Combine with a whisk and scoop about tablespoon of dough into each doughnut mould and then bake in a moderate oven (180ºC) for 15-20 minutes until ready (test with a skewer to ensure it’s cooked).
Once cooled down, sprinkle the powder sugar and enjoy with a cup of your favorite warm drink.
